Ensuring Comprehensive Halal Integrity from Farm to Fork
The Haram Hazard Critical Control Point (HHCCP) system is CHFCA's proprietary framework designed to identify and control potential violations of Halal compliance throughout the poultry processing line. Each HHCCP principle reflects a critical step in safeguarding the Halal status of the final product, in alignment with Islamic jurisprudence and international food safety standards.
The first and most foundational HHCCP is to ensure that all chickens received at the facility are alive, healthy, and free from any visible signs of disease or injury prior to slaughter. This step is crucial, as only live and wholesome animals are eligible for Halal slaughter under Islamic law. CHFCA mandates strict oversight at the receiving dock to validate the physical condition and vitality of each bird before it enters the Halal processing chain.
The second HHCCP involves confirming that the bird is still alive immediately before slaughter, especially after the stunning process. The bird must retain vital signs and be fully conscious or in a recoverable state to meet Halal eligibility. This principle reinforces the Islamic requirement that the animal must not be dead prior to the act of slaughter.
The third HHCCP mandates the recitation of the Islamic blessing ("Bismillahi Allahu Akbar" — In the name of Allah, Allah is the Greatest) at the time of slaughter. This prayer must be said before the process begins and repeated regularly by trained Muslim operators. This invocation is a religious obligation and a core component of the Halal process, ensuring spiritual compliance alongside physical criteria.
CHFCA requires the continuous presence of qualified Muslim personnel equipped with sharpened knives. Their role is to intervene and perform manual slaughter in case the automated rotary fails to make a proper cut. This principle addresses both humane treatment and Halal integrity, ensuring that all animals are properly and compassionately slaughtered according to Islamic rulings.
The fifth HHCCP is to strictly prevent any live bird from entering the scalding tank, which is used to loosen feathers post-slaughter. This step relies heavily on the success of the previous HHCCPs. Allowing a live bird to reach this point constitutes a serious Halal violation and a food safety risk. Therefore, CHFCA requires rigorous controls and monitoring to guarantee that only properly slaughtered birds proceed to scalding.
The sixth HHCCP focuses on ensuring that no diseased or visibly contaminated carcasses enter the food supply during the evisceration stage. CHFCA requires inspection by trained personnel to identify and discard any unfit birds. This control point protects public health and preserves the sanctity of Halal by preventing impure or harmful material from reaching consumers.
The final HHCCP pertains to the post-processing stage, where the product is destined for market. All raw chicken portions must be clearly labeled to indicate that they are not safe for consumption unless properly cooked. CHFCA mandates that finished products be tested and monitored for compliance with physical, chemical, and microbiological parameters as outlined by the Canadian Food Inspection Agency (CFIA). This ensures food safety and reinforces consumer confidence in Halal-labeled products.
